Peppers with Almonds and Paneer


Ingredients:
  • Peppers [red, yellow, green, cut in strips]
  • Paneer cubes
  • Mushrooms [optional, i just had few in the fridge]
  • Carrot [sliced thick and cut in half moons]
  • Almonds [blanched to remove the skin, and then cut into halves]
  • Onion [minced]
  • Raisins [washed and left in water for 5 minutes, then drained]
  • Breadcrumbs with some grated Parmigiano
  • Extra virgin olive oil
Saute the first four ingredients separately, and when the carrots are still crunchy, add the almonds, raisins and the onion and stir. When onions are translucent add everything together and the breadcrumbs in spoons, stirring and adding one more spoon until everything is nicely coated and not too much dry.
Garnish with a sprinkle of minced parsley. It was delicious.

  2. yeah it really was and yes we have that sweet chilies but i think they are seasonal, i don't see them so often.
