Spaghetti di Mezzanotte - Midnight spaghetti

You are out with friends and it is time to go home, but friends want to stay together, so, the natural follow-up will be that one of the friends invites everyone at home for a midnight spaghetti. No one ever says no.

A traditional dish made very quickly, basically with
  • extra virgin olive oil 
  • garlic and chili
  • olives or anchovies or both 
and i love it topped with toasted breadcrumbs like Pasta ca' muddica.

Today i made it too rich actually, with parmigiano's shavings, mushrooms and salame for a more complex and tasty variation for a special dinner with an old friend.

Ingredients for 4 people:
  • 300 grams spaghetti [9 minutes cooking]
  • 200 grams mushrooms
  • 70 grams salsiccia Napoli [sausage with chili] thin sliced
  • 4 black olives pitted and sliced
  • 2 spoons of garlic minced with parsley
  • a dash of white wine
  • few Parmigiano Reggiano's shavings
    1. Boil 3 liters of water and when you see the bubbles add a teaspoon of sea salt and only then add the spaghetti.
    2. In the meanwhile stir fry mushrooms, on high fire, with extra virgin olive oil. The high heat will prevent the mushroom to get watery. Go on stirring until they are done, about five minutes.
    3. Add slices of salsiccia and olives, stir and pour a dash of white wine. Let evaporate, then add the minced garlic and parsley and stir for just a minute.
    All together it will take nine minutes, just the time for the pasta to be ready.
    Toss spaghetti into the fry pan, stir and serve topped with the shavings.

    2. Ah ah nothing romantic fortunately :D , and it was not really at midnight, just at 6 pm.
      Let's see if the guest is going to say anything, so you will come to know. I liked the spaghetti very much even if at a certain point they were a bit too dry, and then they became cold very soon, but that was because of the big portion. Anyway according to me the taste was close to perfection and i am going to make it again, whenever i get the salame :D :D :D

    3. It was near perfect, very slightly dry as you said but not important
      The Parmigiano shavings went very well with this spaghetti
      The salami had a nice flavour n the mushrooms were juicy
      Looks amazing in the close-up above, makes me hungry again
      And you still have one whole n one half of salami so you can make it any time at all
      When should I come? heh heh
